Lentil, green & red pepper, mushrooms & olives salad. #lunch #whatveganseat #vegan #vegetarian #lentils #veggies #olives #veganfoodshare (Taken with instagram)

It was just announced that Mad Cow Disease has been found in a California dairy cow. Keep Calm and Go Vegan! As much as I hate hearing about an animal suffering, these are the kind of news stories that prove a vegan diet does a body good. I’d say now’s as good a time as any to talk about the best cow’s milk alternatives.
I used to drink soy milk, but I switched to almond milk. I find the taste to be much better than soy. Almond Breeze and Whole Food’s 365 Brand are my favorites. It may not be as healthy, but I prefer vanilla over unsweetened. SILK is one of the biggest soy/almond milk brands, but I avoid SILK because it’s owned by White Wave. When I lived in Italy, I drank alpro soya.
I like to have oatmeal for breakfast, so I really only use almond milk for my coffee. But I find the taste of almond milk so much that I’d drink it on its own. I’m a picky vegan and a creature of habit, but if you have a different brand/flavor that’s your favorite, I’d love to hear what you think. Hope that helps! #vegansofig

Apple Fennel Juice Ingredients
- 3 Apples (cored)
- 1 small Fennel bulb (greens left on)
Notes
This was my first time using fennel in juice so I was excited to try it, yet maybe too conservative with it. This juice was tasty because it was mostly carried by the apples. Next time, I’ll kick up the fennel just a tad.

This weeks 1 Week 1 Goal is to drink at least half your weight in ounces of water each day! …at least!
So to help keep yourself reminded, I recommended that you drew a symbol on your hand…which is exactly what I am doing!
I chose a wave as my symbol and everytime I see it I remember to drink up! :)
